This is a super easy recipe and delicious. I use a bagel pans to bake mine in, but you can shape by hand as well. I like the bagel pan for consistency in thickness and knowing how long to bake them for. I get 8 bagels out of this recipe.
Ingredients:
3 Cups of Almond Flour
1/2 cup of Tapioca Flour (sometimes called starch)
1/2 cup of Cassava Flour
2 tsp baking powder
1 tsp of sea salt
2 Tbsp. Apple Cider Vinegar
2/3 cup hot water
2 Tbsp. Pure organic Honey
1 egg yolk
Everything bagel seasoning
Instructions:
preheat oven to 350 degrees
Spray bagel pan with coconut non-stick spray (or spray of choice), or line baking sheet with parchment paper.
heat 2/3 cup of water, hot but not boiling
Combine flours, baking powder, and sea salt in a large bowl
In a small bowl combine the warm water, honey and apple cider vinegar
Add the wet ingredients from above to your dry ingredients and combine well. This will be a very sticky dough.
Fill bagel pan even with top, clean off center for hole in bagel, clean off hands in between as it sticks to your hands. If you are using a baking sheet divide dough in to 8 small balls and shape into bagels and make holes in centers.
Bake for 10 minutes and remove from oven - using a pastry brush apply the egg yolk (whisk first in small bowl) to the top of each bagel.
Sprinkle 1 tsp of everything bagel seasoning on top
Bake 15 more minutes.
